Chocolate overnight oats

There are a certain group of people whom I view with suspicion: the ones that say they can never have chocolate in the morning. Like there's an established rule on when it's acceptable to imbibe cocoa, milk and sugar. Like breakfast has to be boring. Well, whatever, let them eat their bran flakes. Here's a recipe for the chocoholics out there. This tastes like eating pudding for breakfast but without any niggling guilt.

I make this the night before to allow the oats to soak so they're soft and creamy -  bypassing the need to cook them. Since I've started working again, I want to keep my recipes quick and easy during the week and save the more elaborate cooking for the weekends. I like to make my overnight oats in mason jars (or really anything with a lid) so I can grab and go on busy mornings. I mean, who wouldn't want to start the day with this?

Despite the indulgent appearance, here is a list of everything in these overnight oats: oats, milk of your choice (I like Alpro's soy, almond or coconut), one mashed banana, cocoa powder, chia seeds, honey and berries.   Simple, healthy, tasty. You could leave out the mashed banana but it works as a natural sweetener and thickener along with the chia seeds. I like a whole tablespoon of cocoa powder (you could also use cacao powder) because this makes it super chocolatey but feel free to bring it down to a teaspoon. I use frozen sliced berries for convenience but you can obviously use fresh. Optional extras: a spoon of peanut butter swirled for divine richness or some unsweetened coconut flakes for a little texture. You really can't go wrong. Enjoy, mes amis! Chocolate overnight oats with banana and berries

Serves 1.

INGREDIENTS

  • 1/3 cup oats
  • 1/2 cup milk of choice
  • 1 tablespoon cocoa/cacao powder
  • 1 1/2 tablespoons chia seeds
  • 1/2 - 1 teaspoon honey, or to taste
  • 1 banana
  • 1/4 - 1/3 cup sliced berries (strawberries/raspberries/mixed berries)

METHOD

In a bowl or mason jar, use a fork to mash the banana (you can do this roughly if you want a few banana chunks).

Add the oats, milk, cocoa powder, chia seeds and honey and mix well until combined. 

Stir in the berries.

Cover the bowl with clingfilm or put the lid on the mason jar and leave in the fridge overnight. 

In the morning, stir well and add more berries on top if desired.
